To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (makes 850ml, serving 10)

150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Method

To prepare the Syrup: Combine the listed ingredients into a pan, bring to a gentle boil, mixing to dissolve. Then, turn off the stove and let it to cool down completely. Decant into an sterilised bottle, close it and refrigerate it chilled, it will last for about a month.

For the Cocktail Base: Combine all the spirits and syrup into a sizeable container, allow it to infuse for one hour, then filter it best through a fine cloth, making it perfectly clear.

To serve: Pour 85ml from the cocktail base into a stirring glass filled with ice, and agitate gently for a minute to chill. Filter into a frosted cocktail glass or a similar vessel, garnish with some cranberries adding the final touch by giving it a brief mist of the essential oil above the glass.
